Orange Chocolate Madeleine

Hello my lovely readers!! hope you all are doing well. Its been almost a week since the nationwide lockdown amidst the COVID-19 scare. I have been itching to bake for a long time and share it on the blog. The first thing I baked was these absolutely delicious Orange Chocolate Madeleine.

Orange Chocolate Madeleines

“Madeleine” has its origin in France. It is a Petit cake which is served usually at high tea. Best enjoyed with a hot cup of Tea or Coffee, Madeleines are light cakes in the shape of a shell with a bump on one side. Hence its baked in a shell shaped moulds only. You may use a metallic or silicone mould with the characteristic shape for baking these cutesy cakes.

What makes my Orange Chocolate Madeleine stand out?? It is the usage of a secret ingredient which is Brown Butter. Well don’t worry, you can make Brown Butter at the comfort of your home. It’s simply by heating the butter on gas stove until the milk solids start to brown lightly. Thereafter the colour of the butter changes from bright yellow to a golden brown. This Brown butter adds nuttiness to your bakes and a brilliant flavour dimension.

In past few months, I have been busy, first with my classes at the Pastry School and thereafter with my Internship at the school. As a result, I haven’t been able to experiment more in my kitchen and blog about the same. However, now I am trying to get back to blogging more often and share my experiences with you all on a regular basis. With this thought in mind, lets move to the recipe of these absolutely delicious Orange Chocolate Madeleine. I am sure you will love baking them as much as your family and will love to gorge upon them.

Orange Chocolate Madeleine

A French Petit Cake in chocolate flavour with a hint of orange.

Ingredients

  • 125 gms Castor Sugar
  • 3 nos Eggs
  • 95 gms Flour
  • 5 gms Vanilla Essence
  • 4 gms Baking Powder
  • 130 gms Butter
  • 20 gms Unsweetened Cocoa Powder
  • 1 nos Zest of Orange

Instructions

  1. In a heavy bottom saucepan, add the butter cubes and let it brown. Once the butter melts and the milk solids turn a little brown take it off the flame and your Brown Butter is ready. Allow the Brown butter to cool down to room temperature.

  2. Sieve together Flour, Baking Powder and Unsweetened Cocoa Powder, set aside

  3. In a large mixing bowl, whisk together the eggs, sugar and zest of 1 orange.

  4. Once the sugar has almost been incorporated with eggs and the mixture is fluffy, fold in the dry ingredients in parts and mix well

  5. In another mixing bowl, mix together a small part of the batter into the Browned butter such that everything becomes a homogenous mixture.

  6. Now the brown butter mixture into the main batter and mix lightly untill everything is mixed properly.

  7. Cover the batter with a cling wrap and let it rest in the refridgerator for 6-8 hours or overnight.

  8. Grease the Madeleine Moulds with butter and dust them with cocoa powder

  9. After the resting period, Transfer the batter into a piping bag and fill the prepared moulds with it.

  10. In a pre-heated oven, bake the Orange Chocolate Madeleines at 170°-175°C for 10-12 minutes until the skewer comes out clean.

  11. Serve them with hot cup of coffee or tea and enjoy.
