Tiramisu Ice Cream with Fudgy Brownies

Welcome to #frozenfriday series. I am so happy to see how receptive everyone was for the the first blogpost on the #frozenfriday series. I wondered if I could make sorbet without any ice cream machine….then why not try making ice creams as well. So here I am with an simple recipe for Tiramisu Ice Cream with Fudgy Brownies. IMO, Ice creams and brownies together are a match made in heaven.

Tiramisu Ice Cream with Fudgy Brownies

Tiramisu is a popular Italian dessert which has coffee, cream and chocolate as its major components. Hence I thought of incorporating the flavour of tiramisu in my ice cream for this recipe. I must say, everyone in the family were gushing about how the Tiramisu Ice Cream is so light sweet yet has a beautiful aroma of the coffee. The overall combination of my Tiramisu Ice Cream with Fudgy Brownies is simply delish and out of the world.

You may wonder that why I decided to serve Tiramisu Ice Cream with Fudgy Brownies? Well my elder niece simply loves Brownies. Her preference is always the plain Brownies without any nuts or additional toppings. Since its so hot in Mumbai and she was visiting me for the holidays….I wanted to treat her with the indulgent combo of brownies and ice cream. I used a Concoction of Nescafe coffee and Tiramisu Essence from Fab Flavours.

Coming to the method of making Tiramisu Ice Cream, you will be glad to try it as it requires no ice cream maker. All in all only 2 ingredients are required for making the ice cream base. No I am not kidding….its just 2 ingredients for preparing the base of the ice cream without the requirement of an Ice Cream Maker. I call this a ‘cheat method’ of making homemade ice cream. The base ingredients include heavy cream and condensed milk. Yes…that’s about it. Once the base is ready, you can add different flavourings and add-ons to make your favourite flavour of ice cream

There are few things one has to keep in mind for making the Tiramisu Ice Cream:

  • You must use heavy cream, one which has atleast 30% or more fat percentage. I have used Amul Whipping cream in this recipe. There are non-dairy whipping cream also available in the market like D’lecta, Rich Whipping Cream, Arla
  • Both the heavy cream and condensed milk should be chilled before you start making the Ice cream Base.
  • Since we are not using any form of artificial stabilisers, we need high fat content of the heavy cream. Hence we cannot substitute heavy cream with the regular fresh cream.
  • To avoid crystallisation, store the ice cream mix in an air tight container in the freezer.

Ingredients

For Tiramisu Ice Cream

  • 500 gms Heavy Cream Cream with 30% or more fat
  • 200 gms Condensed Milk
  • 100 gms Dark Chocolate
  • 1 tbsp Instant Coffee I used Nescafe
  • 2 tbsp water
  • 3-5 drops Fab Flavours’ Tiramisu Essence

For Fudgy Brownies

  • 1 cup All Purpose Flour
  • 1 tsp Baking Powder
  • 1/4 cup Unsweetened Cocoa Powder
  • 1/4 cup Butter
  • 1/4 cup Dark Brown Sugar
  • 1/2 cup Condensed Milk
  • 150 gms Dark Chocolate
  • 1 tsp Vanilla Extract
  • 1/2 cup Milk
  • 1/4 cup Thumbs Up/ Coke/ Pepsi

Instructions

Method for Tiramisu Ice Cream

  1. In a large bowl, whip the heavy cream on medium speed using a Hand Mixer for 3-5 minutes until you achieve soft peak consistency.

  2. Add the Condensed Milk to the lightly whipped heavy cream and whip it further for 2-3 minutes more.

  3. Dissolve the instant coffee powder with water as per the mentioned quantities. Add this coffee concoction to the ice cream base and gently fold in with the helpof a spatula. Now add 3-5 drops of Fab Flavours Tiramisu Oil Soluble Flavour to the ice cream base and mix gently.

  4. Create chocolate shavings using a knife or you may also grate it into small strands using the kitchen grater like I did. Add the grated chocolate into the Tiramisu Ice Cream base and mix such that the chocolate is spread throughout uniformly.

  5. Pour the Tiramisu Ice Cream mixture into an freezer friendly airtight container and keep it in the freezer for 7-8 hours until set completely.

Method for Fudgy Brownies

  1. Grease and line a 9×9 inch baking tin with parchment paper and keep aside. Pre-heat the oven at 180degrees Celsius

  2. In a bowl, sieve the All purpose Flour, Salt, Baking Powder and Unsweetened Cocoa Powder together and set aside. I have used Hershey's Natural Unsweetened Cocoa in this recipe.

  3. In a microwave safe bowl add the chopped dark chocolate and melt it in the microwave at 30sec intervals. This will ensure that the chocolate doesn’t burn. After each 30sec interval, stir in the chocolate and then keep for another 30sec. It will take around 1-2 mins depending upon how small your chocolate pieces are. In case you don’t have a microwave, you may also melt the chocolate on a double boiler setup over the Gas stove.

  4. In a large bowl, Beat together butter (softened at room temperature) and brown sugar until creamy. Now add the melted chocolate and mix for another minute.

  5. In this liquid mixture, add the condensed milk and milk until it forms a homogeneous mixture. If you are using an Electric Hand Mixer, use it at the lowest speed. Add the vanilla extract and give it a gentle mix

  6. Now using a spatula, gently fold in the dry ingredients which we had sieved earlier in small batches.

  7. After the dry  ingredients are well incorporated into the wet ingredients, add the cola in the end and mix gently. I used Thumbs-up in my recipe. You may also use Coca-cola or Pepsi.

  8. Pour the Brownies batter into the pre-lined baking tin and bake the brownies for 25-30 mins at 180degrees Celsius. Since melted chocolate is used in this recipe you may not get a clean skewer when inserted into the middle of the brownie even if they are cooked in the given time frame. So Once the top looks cooked, you must take the brownies out of the oven.

  9. Once the Brownies have come down to room temperature, place the tray inthe refrigerator to set it completely. After 1-2 hrs in the refrigerator, take out the Brownies and cut them into 3×3 inch pieces.

  10. To serve the final dish, warm the brownies for about 30 seconds and place it on the serving dish. Scoop out the Tiramisu Ice Cream and place it on the warm, Fudgy Brownies and serve them to your loved ones.
