“Life is Better with Freshly Baked Cookies”

All through my childhood and till a year back, I had assumed that store bought biscuits or cookies from the likes of Parle, Britannia etc. was the best thing available. I am happy that this belief was shattered when I stumbled upon the rustic, oven fresh Cookies from Oh Dough located in Fort, Mumbai.

Ever since, I have been experimenting and trying to bake cookies at home which luckily have turned out well. I’ll share those recipes and my experience with them in my upcoming posts.

Today, I am going on a nostalgia trip with this recipe “Tutti Frutti Cookies” which is eggless.  These cookies remind me of the Britannia cakes which are laden with tutti frutti.  You will want to associate these with the Fruit Biscuits from the famous Karachi Bakery in Hyderabad, however they differ in taste completely. These cookies are rustic in looks, but they are crispy on the outside and chewy on the inside.

Measure all ingredients
Beat sugar and butter together until light and fluffy
Using an ice cream scoop place the chilled cookie dough on the baking tray lined with parchment paper
Tutti Frutti Cookies fresh out of oven

Ingredients:-

  • 1/2 cup: Unsalted Butter (lightly softened)
  • 1/3 cup: Castor Sugar / Powdered Sugar
  • 1/2 tsp: Vanilla essence
  • 1& 1/4th cup: All purpose Flour (Maida)
  • 1/2 cup: assorted Tutti Frutii

Method:-

  • In a large mixing bowl, using a hand mixer beat together butter and castor sugar until its light and fluffy.
  • Add the vanilla essence and beat until its all combined.
  • Add the flour and mix until you get a crumbly texture.
  • Now add the tutti frutti to this flour mixture and mix well.
  • Once the cookie dough is ready, chill it for about 30 minutes by placing it in the refrigerator.
  • Pre-heat the oven at 160 degrees Celsius.
  • After the cookie dough is chilled, using a ice cream scoop, take a scoop full of cookie dough and place it on the baking tray lined with parchment paper. Make sure there is gap between the cookies on the baking tray.
  • Bake the cookies in the middle rack  at 160 degrees Celsius for 10-12 minutes until they are lightly golden in color. In case your oven heats up quickly, then bake the cookies for 8-10 mins and check for the texture. If undone, bake for another 2 mins.
  • Once baked, cool them on a wire rack for about 30 minutes and then serve.

Notes:-

  • Use all the ingredients at room temperature.
  • Allow the butter to softened a bit as it will help in mixing with sugar easily.
  • The time for baking will vary from oven to oven as the temperature of every oven is different and there are voltage fluctuations as well to be factored into the time.
