Chocolate Banana Muffins

When it comes to breakfast ideas….the morning meal is definitely incomplete without something sweet. My recipe for Chocolate Banana Muffins is perfect for your breakfast as its healthy as well as appeasing to your sweet tooth. Its chocolatey, made of whole wheat flour and has a secret ingredient which will take your regular banana muffin a notch up on the taste-o-meter.

Now a days, many of us have come across a variety of Banana Breads which is a great tea cake in my opinion. However being at Mommyland, I could not get a loaf tin to bake a banana bread. So came up with the idea of turning the recipe into muffins as I bought a muffin mould from Whisq for my Mommy during the recent sale at Foodhall and Big Bazaar.

As I am not comfortable with baking with eggs, I am sharing an eggless muffins recipe which is  adapted from Radhika’s recipe. 

Even if it was first time that I baked these muffins in convection mode in a Microwave (Coz Mommy gave away her OTG to me :D), they turned out really well. Everyone at home appreciated it. I also got great compliments from my Mommy’s neighbors for these sweet bakes. 🙂

Do try these out, I am sure they will become a regular at your breakfast table as well as a great accompaniment with the evening tea/coffee.

Ingredients:-

  • 1 3/4 cup: Whole Wheat Flour
  • 1/4 cup:  Unsweetened Cocoa Powder (I used the one from Hershey’s)
  • 1/2 cup: Butter (softened at room temperature)
  • 1 cup: Castor Sugar (powdered sugar)
  • 1 1/2 tsp: Baking Powder
  • 1/2 cup: Greek Yogurt (Refer Notes)
  • 2 medium: Bananas, pureed
  • 1 tsp: Vanilla Essence
  • 4 tbsp: Milk (at room temperature)
  • 1/4 cup: White Chocolate Chips (the secret ingredient I spoke about in the beginning)

Method:-

  • Preheat  the oven at 180 degrees for 15 minutes. If using a microwave, select the convection mode only and preheat it for 10 minutes at 180 degrees.
  • Sieve the  Flour, cocoa powder and baking soda together and keep aside.
  • In a separate bowl, whisk the softened butter with castor sugar until its light and fluffy.
  • Add in the Greek yogurt/ Hung curd into the butter mixture and mix well.
  • Add vanilla essence and banana puree to the wet ingredients and mix well.
  • Now add the dry ingredients in small quantities alternating with 1 tbsp milk and mix in a cut and fold method such that the flour mix gets incorporated with the wet ingredients. In total it will take 2-3 small batches of flour and milk to arrive at the final batter.
  • Add in the white chocolate chips to the batter and mix gently.
  • Line the muffin tray with cupcake liners and fill the moulds up-to 3/4th level. This recipe will give you around 10-12 muffins of regular size.
  • Tap the tray to get rid of excess air and bake them at 180 degrees Celsius for 18-20 minutes. In case you are using a microwave, set it to 170 degrees Celsius on Convection Mode only and bake for 20-22 minutes. (Refer Notes) Adjust the baking time based on your oven temperatures. If a toothpick is inserted into the muffin’s center, it should come out clean.
  • Once baked, leave the muffins on wire rack to cool completely before serving.
  • These muffins stay fresh up-to 2 days when kept in an air tight container in the fridge. Pull them out of the fridge at least 30-45 minutes prior to serving these utterly delicious Chocolate Banana Muffins.

Notes:-

  • For a rounded top, always ensure to fill the cupcake liners with 3/4th level of batter. If more batter is added, it may ooze out from its shape and the center of the muffin will be under cooked.
  • In case Greek Yogurt is not readily available, you may use the home made curd as well. When using the regular curd, it is advisable to hang it using a muslin cloth for at least 30 minutes to get rid of excess water.
  • In case you are using bananas which are overripe, reduce the baking time by 3-5 minutes.
  • While baking cakes using a microwave oven, make use of the convection mode. However unlike OTG, the temperature of convection mode will be lower than that of the regular OTG and the baking time will be more for convection mode.
