Dulce De Leche Brownies

My love for chocolates is the prime reason why I love baked desserts. Anything that has chocolates always attracts me towards its however calorie-dense the dish be. Brownies are one my most favorite chocolate desserts and I am always trying out eggless recipes in my kitchen.  Today, I am sharing of such eggless recipe of Dulce De Leche Brownies with you all.

You may wonder what in the world does refer to “Dulce De Leche“. Well its a Spanish word which means candy made of milk. In very simple terms, “Dulce De Leche” means sweetened condensed milk which is cooked on slow flame to achieve a caramel texture.

Trust me these brownies taste divine upon the addition of “Dulce De Leche”. Although these days you can easily get ready-made Dulce De Leche from the super markets. I have made my own with a very easy trick which I picked up in one of the baking workshops I recently attended.

These brownies are special as I made these for my niece who recently returned from the US. She is really fond of brownies and devoured my Dulce De Leche versions along with the entire family.

I somehow don’t like the brownies to be overtly sweet, hence I suggest on using unsweetened Cocoa Powder and good quality Dark Chocolate (at least 70% or above). I feel the rich and dark chocolate flavour are key to good brownies.

Dulce De Leche Brownies

Ingredients

  • 1 cup All Purpose Flour
  • 1/4 cup Unsweetened Cocoa Powder
  • 1 tsp Baking Powder
  • 1/2 tsp Salt
  • 1/4 cup Unsalted Butter
  • 150 gms Dark Chocolate
  • 1/4 cup Dark Brown Sugar
  • 100 gms Condensed Milk
  • 1/2 cup Milk
  • 1 tsp Vanilla Extract
  • 1/4 cup Thumbs-up/ Coke/ Pepsi adding cola drink gives height to the brownies and adds to its taste
  • 1/4 cup Dulce De Leche refer notes on how to make it at home

Instructions

  1. Grease the baking tin with butter on all sides and line it with Parchment Paper. For this recipe a 9''x 9'' square tin would be appropriate. In case you have a larger tray like a 11''x 9'' rectangular tin, then double the recipe.

  2. Pre-heat the oven at 180 degrees Celsius for at least 15 minutes prior to baking the brownies

  3. In a bowl, sieve the All purpose Flour, Salt, Baking Powder and Unsweetened Cocoa Powder together and set aside. I have used Hershey's Natural Unsweetened Cocoa in this recipe.

  4. Set up a double boiler on the gas stove. Chop the chocolates into small pieces and melt in on the double boiler until smooth and there are no lumps in the chocolate. 

  5. In a large bowl, Beat together butter (softened at room temperature) and brown sugar until creamy. Now add the melted chocolate and mix for another minute.

  6. In this liquid mixture, add the condensed milk and milk until it forms a homogeneous mixture. If you are using an Electric Hand Mixer, use it at the lowest speed. Add the vanilla extract and give it a gentle mix.

  7. Now using a spatula, gently fold in the dry ingredients which we had sieved earlier in small batches.

  8. After the dry  ingredients are well incorporated into the wet ingredients, add the cola in the end and mix gently. I used Thumbs-up in my recipe. You may also use Coca-cola or Pepsi. Adding the cola drink adds a rich taste to these eggless brownies and also helps in deepening the color.

  9. Pour the brownie batter into the lined baking tin and put dollops of Dulce De Leche leaving some gap between them. Then using a toothpick or skewer make swirls across the baking tin.  

  10. Bake the brownies in the pre-heated oven at 180 degrees Celsius for 20-25  minutes the top looks cooked. Since melted chocolate is used in this recipe you may not get a clean skewer when inserted into the middle of the brownie even if they are cooked in the given time frame. 

  11. The trick to cut out perfect pieces of brownies, I suggest to cool them down well. Keep them in the refrigerator for about an hour or two and then take them out for cutting.

  12. If you like your brownies warm, you may put them in microwave for 30 seconds and then serve. Although even if they are at room temperature, they taste absolutely delicious.

Recipe Notes

  • To make your very own Dulce De Leche at home: 
    In a pot heat water until it starts to boil. Immerse an unopened can of condensed milk into the boiling water and let it simmer on low-medium heat for at least an hour or more. Cover the pot of water whilst the can of condensed milk is inside it. As the water evaporates, add some to maintain the optimum water level. After an hour and half take out the can of condensed milk and let it cool to room temperature. When you open the can, you will have your very own Dulce De Leche. Use as required in your desserts.
  • The measurements of the ingredients in terms of cups and spoons are taken using the standard measuring cups & spoons set. It is ideal to have one in your baking tool set for fool proof baking.
