Raspberry Sorbet
Its sultry summers everywhere in India. Every now and then….I just want to have something cold which will soothe the throat as well as mind. Hence I feel that the season is perfect to gorge upon delicious frozen dishes. Hence starting this friday, I am going to share 4 delicious recipes of Frozen desserts. The first one in the #frozenfridays series is a light, fruity Raspberry Sorbet.
Sorbet is a french style frozen dessert which comprises of a fruit purees and simple syrup. Its usually served as palate cleansers in between meal courses. However this Raspberry Sorbet is a perfect for your after meal dessert. It has the goodness of tart Raspberries and is not overly sweet.
This recipe is really simple which uses 2 ingredients namely Frozen Raspberries and Condensed milk. Moreover, one doesn’t require to use an ice cream machine for making this sorbet. The only equipment you need is a food processor or powerful blender for this recipe. Using frozen raspberries instead of the fresh ones ensures a smooth raspberry puree for the sorbet. I was lucky to get frozen raspberries at the Nature’s Basket store. You may also freeze fresh raspberries at home and use them for making this super simple and delicious raspberry sorbet.
The amount of Condensed milk used in this recipe is very less quantity. Adding condensed milk adds creaminess to the sorbet. In case you don’t have condensed milk, you may subside it with a Simple Sugar syrup as well. Making the sugar syrup requires you to boil 1 cup of granulated sugar with 1/2 cup water until the sugar completely dissolves. Once done, let the sugar syrup is ready….cool it down to room temperature and then use it for your sorbet recipe.
Coming to the texture of the sorbet, it comes in between a granita and ice cream. Its not as creamy like a gelato or ice cream, but it will taste like a fruity Candy bar that kwality walls or amul sell.
Raspberry Sorbet
A perfect summer dessert which is tart and not overly sweet.
Ingredients
- 200 gms frozen Raspberry
- 60 gms condensed milk or
- 45 ml simple syrup recipe of the Simple syrup is mentioned in the main text of the blog
Instructions

In a food processor or blender, add the frozen raspberries and condensed milk. Blend it till you get a smooth mixture. It should take about 5-10 minutes.

Transfer the sorbet mixture in a freezer friendly container and place it in the freezer for atleast 6-8 hrs.

After the Raspberry Sorbet is set in the freezer for 6-8 hrs, take it out for 3-5 minutes. Serve it using an ice cream scoop and enjoy with your loved ones
