Schezwan Veggie Puffs

Golden, Light and flaky Schezwan Veggie Puffs are here to brighten your Snack Table.Here in this post, I have tried to revamp the old school pattice/puffs generally available at our confectioners with a Spicy Chinese Twist.

Aloo Puffs or Pattice have been a common snack for me to have from my School/ College canteen when I have not brought home-cooked lunch. I always wondered how does the puff has so many layers. Furthermore, a couple of months back, we came across frozen puffs with different fillings which were supposed to be thawed and baked at home.

Consequently, I started to look out for the tips and tricks to make puffs at home. Who doesn’t enjoy market quality dishes that can be made at home?? Furthermore, the dishes made at home have your love and are much healthier and hygienic than the ones available outside. It becomes all the more special when you go an extra mile and treat your loved ones with dishes made out of good quality ingredients.

With this inquisitive thought, I began my research for the process of making puff pastry at home. Trust me, It is a lengthy procedure yet its worthy. However,  in this recipe, I have used the ready-made Puff Pastry which I got from FoodHall in Delhi when I had been to my parents place. I am yet to find a shop in Mumbai though to get ready-made puff pastry. In case you need a quick and easy method to make puff pastry at home, do let me know so that I can share it on a separate blog post.

I find it most noteworthy that puff pastry is so versatile. You may go the savory route or may also experiment with sweet fillings as well. There are plenty of options for fillings to make puffs at home. After trying 2-3 savory varieties of filling both vegetarian and non-vegetarian, I am eager to try out the sweet fillings as well. Guess my experiments with Puff pastry will go one for quite some time.

Schezwan Veggie Puffs

Golden, Crisp and Flaky Puffs filled with spicy Scehzwan Vegetables

Ingredients

  • 500 grams Ready Made Puff Pastry dough
  • For Greasing Oil or melted butter
  • For sealing the edges water

For Schezwan Vegetables Filling

  • 1 Tbsp Chopped Garlic
  • 1 medium sized Chopped Onion
  • 1/2 cup Finely Chopped Carrots
  • 1/2 cup Finely Chopped Bell Peppers I used all the three varieties
  • 1/4 cup Sweet Corn
  • 1/4 cup Peas
  • 100 grams Grated paneer You may use home-made paneer as well
  • 2 tbsp Schezwan Sauce I used Chings Schezwan Chutney
  • 1 tbsp Tomato Ketchup
  • 2 tsp Red Chilli Sauce
  • 1 tsp Black Pepper Powder
  • To Taste Salt
  • 1 1/2 Tbsp Oil

Instructions

  1. Follow the Instructions mentioned on the packaging of the Store- bought Puff Pastry to thaw them and keep aside.

  2. In a pan, Heat the oil and add chopped garlic and onions and saute them until light brown. 

  3. Now add in chopped carrots, bell peppers and fry them until half cooked. Thereafter add the peas, sweet corn and grated paneer to the pan and saute well.

  4. Season the veggies with salt and black pepper and thereafter add the Schezwan Sauce, Tomato Ketchup and Red Chili Sauce. Stir well and fry the filling for 1-2 minutes until all the sauces and seasoning are mixed properly. Please note that we don't want the vegetable to be over cooked and soft and mushy. They should be crunchy in texture, hence don't cover the pan with a lid while preparing the filling.

  5. Take out the Schezwan filling onto a bowl to cool down.

  6. Now take half of the puff pastry dough and roll it out into a large rectangle such that the thickness of the sheet is atleast 1/2 cm. The sheet should not be thin like that of a spring roll as it will not be able to hold the filling inside it and may tear apart due to its weight

  7. Cut the rolled out sheet into shape and size of a Bread Slice. In each of the sheet place 1 spoon of the prepared filling in the middle. Apply some water on the edges and fold the puff into a rectangle shape. Now with the help of a fork, press down the edges on the opening sides to seal them properly. Repeat the procedure for all the dough cut-outs

  8. Grease the baking tray lightly with melted butter or oil and place the prepared filled up puffs on it. Lightly brush the top of the puffs with oil/ butter and bake at 180 degrees for 20-25 minutes until the top is golden and you get to see the flaky layers in the puffs.

  9. Serve them hot with the choice of your dipping sauce and enjoy with your family.
